A hearty and rustic Italian classic made easy in the slow cooker—this chicken cacciatore is rich with tomatoes, bell peppers, and herbs, all simmered to tender perfection.

- 6 bone-in, skinless chicken thighs
- 1 bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (14 oz) can diced tomatoes
- 1/2 cup chicken broth
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley or basil for garnish
- Cooked pasta or rice, for serving
Instructions
- Season chicken thighs with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and brown the chicken on both sides. Transfer to the slow cooker.
- Add sliced bell pepper, onion, and garlic on top of the chicken.
- Pour in crushed tomatoes, diced tomatoes, chicken broth, oregano, basil, and red pepper flakes. Stir gently to combine.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and cooked through.
- Serve over cooked pasta or rice and garnish with fresh parsley or basil.
Notes
For extra flavor, add a splash of red wine with the broth. Boneless thighs or breasts can be used, but bone-in adds more richness.
