Description

A savory and tender chicken dish slowly cooked in a rich Marsala wine sauce, perfect for a cozy dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1 cup sliced mushrooms
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley for garnish (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, thyme, and oregano.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken on both sides until lightly browned, about 2-3 minutes per side.
  3. Transfer the chicken to the slow cooker.
  4. In the same skillet, add onions, garlic, and mushrooms and cook for 2-3 minutes until softened.
  5. Pour in the Marsala wine and chicken broth, scraping up any browned bits from the pan.
  6. Pour the mixture over the chicken in the slow cooker.
  7. Cover and cook on low for 5-6 hours or on high for 2-3 hours.
  8. Remove the chicken and set aside.
  9. In a small bowl, mix cornstarch and water to create a slurry.
  10. Stir the slurry into the slow cooker sauce and cook on high for 10-15 minutes until thickened.
  11. Return chicken to the slow cooker to coat with the sauce or plate and spoon sauce over the top.
  12. Garnish with chopped fresh parsley if desired and serve warm.

Notes

Serve over mashed potatoes, pasta, or rice for a hearty meal. You can substitute Marsala wine with a mix of grape juice and a splash of vinegar for a non-alcoholic version.
