- 4 boneless, skinless chicken breasts
- 1 cup Marsala wine
- 1 cup chicken broth
- 1 cup sliced mushrooms
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, thyme, and oregano.
- Heat olive oil in a skillet over medium-high heat and sear the chicken on both sides until lightly browned, about 2-3 minutes per side.
- Transfer the chicken to the slow cooker.
- In the same skillet, add onions, garlic, and mushrooms and cook for 2-3 minutes until softened.
- Pour in the Marsala wine and chicken broth, scraping up any browned bits from the pan.
- Pour the mixture over the chicken in the slow cooker.
- Cover and cook on low for 5-6 hours or on high for 2-3 hours.
- Remove the chicken and set aside.
- In a small bowl, mix cornstarch and water to create a slurry.
- Stir the slurry into the slow cooker sauce and cook on high for 10-15 minutes until thickened.
- Return chicken to the slow cooker to coat with the sauce or plate and spoon sauce over the top.
- Garnish with chopped fresh parsley if desired and serve warm.
Notes
Serve over mashed potatoes, pasta, or rice for a hearty meal. You can substitute Marsala wine with a mix of grape juice and a splash of vinegar for a non-alcoholic version.
