- 1.5 lbs boneless, skinless chicken thighs
- 3 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp paprika
- Salt and pepper to taste
- 3 cups chicken broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet and sear chicken thighs for 2-3 minutes on each side until lightly browned.
- Transfer chicken to the slow cooker.
- Add carrots, potatoes, celery, onion, and garlic to the slow cooker.
- Stir in tomato paste, thyme, rosemary, paprika, salt, and pepper.
- Pour in the chicken broth and mix everything well.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- If desired, stir in cornstarch slurry 30 minutes before serving to thicken the stew.
- Shred or chop chicken into bite-sized pieces and return to the stew.
- Stir, garnish with fresh parsley, and serve warm.
