  • 5 boneless, skinless chicken thighs or chicken breasts
  • 1 yellow onion, diced
  • 3 bell peppers, diced
  • 2 zucchini, sliced
  • 1 tablespoon minced garlic
  • 1 (14 oz) can diced tomatoes with juices
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. Lightly grease the inside of your slow cooker.
  2. Add the diced onion, bell peppers, zucchini, and minced garlic to the bottom.
  3. Place the chicken on top of the vegetables.
  4. Pour the diced tomatoes with their juices over the chicken.
  5. Season with salt, black pepper, oregano, thyme, and paprika.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.
  7. Shred the chicken in the slow cooker or serve whole with vegetables spooned over the top.
  8. Adjust seasoning if needed and serve warm.

Notes

Tip: For deeper flavor, sear the chicken for 2–3 minutes per side before slow cooking.
