Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) white beans, drained and rinsed
- 2 cups vegetable broth
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 cups fresh spinach
- Juice of 1 lemon
- Fresh parsley for garnish (optional)
Instructions
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
- Transfer to a slow cooker and add carrots, celery, zucchini, bell pepper, diced tomatoes, chickpeas, white beans, vegetable broth, oregano, thyme, paprika, salt, and pepper.
- Stir to combine and cover.
- Cook on low for 6-7 hours or on high for 3-4 hours until vegetables are tender.
- Stir in spinach and lemon juice during the last 10 minutes of cooking.
- Serve hot, garnished with fresh parsley if desired.
Notes
This stew gets better the next day – perfect for meal prep. Serve with a slice of whole grain bread or a sprinkle of feta cheese.
