Description

Tender chicken and golden potatoes slow-cooked in a rich Parmesan garlic sauce, topped with melted mozzarella and extra Parmesan for a creamy, comforting meal.


Ingredients

  • 2 lbs chicken breast, cut into smaller pieces
  • 1 tbsp olive oil
  • ¾ cup creamy Parmesan garlic sauce (such as Buffalo Wild Wings Parmesan Garlic Sauce)
  • 1 ½ lbs golden potatoes, cut into smaller pieces
  • ½ cup water
  • ½ tsp salt
  • Dash of pepper
  • ½ tsp paprika
  • ⅓ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Lightly grease the slow cooker with olive oil or nonstick spray.
  2. Add chicken pieces and golden potatoes to the slow cooker.
  3. In a small bowl, mix Parmesan garlic sauce with water, salt, pepper, and paprika.
  4. Pour sauce mixture over chicken and potatoes, stirring gently to coat evenly.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and potatoes are cooked through.
  6. Sprinkle with grated Parmesan and shredded mozzarella cheese.
  7. Cover and cook for an additional 10-15 minutes, until cheese is melted.
  8. Serve hot and enjoy.

Notes

For a thicker sauce, remove the lid for the last 30 minutes of cooking. You can substitute chicken thighs for a richer flavor.
