Description

This Slow Cooker Pulled Chicken BBQ is the ultimate fuss-free meal! Tender chicken breasts are cooked to perfection in a tangy homemade BBQ sauce, then shredded for juicy, flavorful sandwiches or bowls. Perfect for busy weeknights or feeding a crowd – just set it and forget it!


Ingredients

  • 4 large boneless skinless chicken breasts (approx 32oz, weighed raw)
  • 1 cup reduced sugar ketchup
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt

Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, whisk together ketchup, water, brown sugar, apple cider vinegar, paprika, chili powder, garlic powder and salt.
  3. Pour sauce over chicken, coating evenly.
  4. Cover and cook on LOW for 4-6 hours until chicken shreds easily.
  5. Remove chicken and shred with two forks. Return to slow cooker and mix with sauce.
  6. Serve on buns with coleslaw or over rice. Enjoy!

Notes

Tips: For spicier BBQ sauce, add 1/4 tsp cayenne pepper. Substitutions: Use bone-in thighs for richer flavor. Storage: Refrigerate in airtight container for up to 4 days or freeze for 3 months.
