Smoked BBQ Meatloaf

  • Author: Crystal
  • Total Time: 2 hours 50 minutes
  • Yield: 6 servings 1x

Description

A flavorful smoked BBQ meatloaf packed with savory spices, glazed with tangy barbecue sauce, and slow-cooked to perfection for that irresistible smoky finish.

Ingredients

Scale
  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup BBQ sauce (plus extra for glazing)
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 1 tbsp olive oil

Instructions

  1. Preheat your smoker to 250°F (120°C).
  2. In a large bowl, mix the ground beef, breadcrumbs, milk, eggs, onion, garlic, BBQ sauce, Worcestershire sauce, and spices until well combined.
  3. Form the mixture into a loaf shape and place it on a smoker-safe tray or pan.
  4. Brush the top of the meatloaf with BBQ sauce.
  5. Smoke for about 2 to 2.5 hours, or until internal temperature reaches 160°F (71°C).
  6. During the last 30 minutes, glaze again with BBQ sauce for a sticky, caramelized finish.
  7. Remove from the smoker, let rest for 10 minutes before slicing.
  8. Serve with extra BBQ sauce on the side.

Notes

Use your favorite BBQ wood chips for added flavor — hickory or applewood work great. Letting the loaf rest keeps it juicy and tender.
