- 2 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup BBQ sauce (plus extra for glazing)
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chili powder
- 1 tbsp olive oil
Instructions
- Preheat your smoker to 250°F (120°C).
- In a large bowl, mix the ground beef, breadcrumbs, milk, eggs, onion, garlic, BBQ sauce, Worcestershire sauce, and spices until well combined.
- Form the mixture into a loaf shape and place it on a smoker-safe tray or pan.
- Brush the top of the meatloaf with BBQ sauce.
- Smoke for about 2 to 2.5 hours, or until internal temperature reaches 160°F (71°C).
- During the last 30 minutes, glaze again with BBQ sauce for a sticky, caramelized finish.
- Remove from the smoker, let rest for 10 minutes before slicing.
- Serve with extra BBQ sauce on the side.
Notes
Use your favorite BBQ wood chips for added flavor — hickory or applewood work great. Letting the loaf rest keeps it juicy and tender.
