- 250g pasta (spaghetti or fettuccine)
- 150g smoked salmon, sliced
- 3 tbsp green pesto
- 150ml heavy cream
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
- Grated Parmesan (optional)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat olive oil and sauté garlic for 1 minute until fragrant.
- Add pesto and heavy cream, stirring to combine into a smooth sauce.
- Stir in lemon juice and season with salt and pepper.
- Add the cooked pasta to the sauce, tossing to coat evenly. Add a splash of pasta water if needed to loosen the sauce.
- Fold in the smoked salmon gently to warm it through without overcooking.
- Serve immediately, garnished with fresh herbs and Parmesan if desired.
Notes
For a lighter version, replace cream with Greek yogurt. Use whole-grain or gluten-free pasta if preferred.
