  • 2 Tbsp olive oil, divided
  • 12 oz. smoked turkey kielbasa sausage (quartered through the length then sliced)
  • 1 1/2 cups chopped yellow onion (1 medium)
  • 1 cup diced carrots (2 medium)
  • 1 cup diced celery (2 stalks)
  • 1 1/2 cups chopped yellow bell pepper (1 medium)
  • 1 1/2 Tbsp minced garlic (4 cloves)
  • 6 cups low-sodium chicken broth
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 1/2 cups 1/2-inch diced russet or red potatoes (peel if using russet)
  • 1 Tbsp dried Italian seasoning
  • Salt and freshly ground black pepper
  • 1 cup diced zucchini (1 small)
  • 2 cups chopped spinach
  • 2 Tbsp minced fresh parsley
  • Finely shredded parmesan, for serving (optional)

Instructions

  1. In a large pot, heat 1 Tbsp olive oil over medium-high. Add sausage and cook 4-5 minutes until lightly browned. Remove with slotted spoon.
  2. Add remaining oil to pot. Sauté onions, carrots, and celery 5 minutes until softened.
  3. Stir in bell pepper and garlic, cooking 2 minutes until fragrant.
  4. Pour in chicken broth and diced tomatoes. Add potatoes, Italian seasoning, 1 tsp salt, and 1/2 tsp pepper. Bring to boil.
  5. Reduce heat to medium-low. Simmer uncovered 15 minutes until potatoes are tender.
  6. Stir in zucchini and cooked sausage. Simmer 5 more minutes.
  7. Add spinach and parsley. Cook 2 minutes until wilted. Season to taste.
  8. Serve hot topped with parmesan if desired.

Notes

Tips: For spicier soup, use Andouille sausage. Add cannellini beans for extra protein.
Substitutions: Kale works instead of spinach. Sweet potatoes can replace russets.
