Instructions
- Preheat oven to 350°F (175°C).
- Cream together 1 cup butter and sugar until light and fluffy.
- Beat in egg, vanilla, and pumpkin until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- Drop spoonfuls of dough onto a greased or parchment-lined baking sheet.
- Bake for 10-12 minutes or until lightly browned.
- Let cookies cool completely.
- For frosting, beat together 1/2 cup butter and cream cheese until smooth.
- Add powdered sugar gradually and beat until fluffy, then mix in vanilla.
- Spread cream cheese frosting on cooled cookies.
