Ingredients

- 2 whole heads of garlic
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 stalks celery, chopped
- 2 medium carrots, chopped
- 4 cups vegetable broth (or chicken broth)
- 1 tsp fresh thyme leaves
- 1 bay leaf
- 1/2 cup heavy cream (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Slice the tops off the garlic heads, drizzle with 1 tbsp olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden.
- In a large pot, heat remaining olive oil over medium heat. Add onion, celery, and carrots, and sauté until softened.
- Squeeze the roasted garlic cloves out of their skins and add them to the pot.
- Pour in the broth, add thyme and bay leaf, and bring to a simmer. Cook for 20 minutes.
- Remove bay leaf and blend soup until smooth and creamy.
- Stir in cream if desired, and season with salt and pepper.
- Serve warm, garnished with fresh parsley.
