A comforting and healing roasted garlic soup, rich in flavor and warmth, perfect for soothing the body during a cold.


Ingredients

Scale
  • 2 whole heads of garlic
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 4 cups vegetable broth (or chicken broth)
  • 1 tsp fresh thyme leaves
  • 1 bay leaf
  • 1/2 cup heavy cream (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the tops off the garlic heads, drizzle with 1 tbsp olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden.
  3. In a large pot, heat remaining olive oil over medium heat. Add onion, celery, and carrots, and sauté until softened.
  4. Squeeze the roasted garlic cloves out of their skins and add them to the pot.
  5. Pour in the broth, add thyme and bay leaf, and bring to a simmer. Cook for 20 minutes.
  6. Remove bay leaf and blend soup until smooth and creamy.
  7. Stir in cream if desired, and season with salt and pepper.
  8. Serve warm, garnished with fresh parsley.

Notes

This soup is soothing and gentle on the stomach, making it ideal for colds. Roasting the garlic mellows its flavor, giving the soup a rich, sweet taste.
