Ingredients

- 1 cup active sourdough starter
- 1 cup mashed potatoes (plain)
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup warm milk
- 1 large egg
- 1 teaspoon salt
- 1 teaspoon baking powder
Instructions
- Combine sourdough starter, mashed potatoes, warm milk, sugar, butter, and egg in a bowl.
- Mix in flour, salt, and baking powder until a soft dough forms.
- Knead until smooth and elastic, about 8–10 minutes.
- Cover and let rise until doubled.
- Divide the dough into equal portions and shape into buns.
- Place on a baking sheet and allow to rise again until puffy.
- Bake at 375°F (190°C) for 18–20 minutes until golden brown.
Notes
For extra softness, brush the tops with melted butter after baking.
