Ingredients

  • 2 cans salmon (14.75 oz each), drained
  • 2 large eggs
  • 1/2 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

  1. Drain canned salmon and remove any large bones or skin if desired.
  2. In a mixing bowl, combine salmon, eggs, cornmeal, flour, onion, bell pepper, and seasonings.
  3. Mix until ingredients are well incorporated and form into patties.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Fry patties in batches until golden brown and crispy, about 3–4 minutes per side.
  6. Drain on paper towels and serve hot with your favorite dipping sauce or sides.

Notes

For extra flavor, add a splash of hot sauce to the mixture. These patties pair perfectly with coleslaw, grits, or cornbread.
