- 2 cans salmon (14.75 oz each), drained
- 2 large eggs
- 1/2 cup cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- Drain canned salmon and remove any large bones or skin if desired.
- In a mixing bowl, combine salmon, eggs, cornmeal, flour, onion, bell pepper, and seasonings.
- Mix until ingredients are well incorporated and form into patties.
- Heat vegetable oil in a large skillet over medium heat.
- Fry patties in batches until golden brown and crispy, about 3–4 minutes per side.
- Drain on paper towels and serve hot with your favorite dipping sauce or sides.
Notes
For extra flavor, add a splash of hot sauce to the mixture. These patties pair perfectly with coleslaw, grits, or cornbread.
