Description

This classic Southern Meatloaf is moist, tender, and packed with bold, comforting flavor. Topped with a sweet and tangy glaze, it’s a true family favorite for any dinner table.


Ingredients

  • 2 lbs ground beef
  • 1 cup crushed saltine crackers
  • 1 small onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 2 large eggs
  • 3/4 cup whole milk
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • For the glaze: 1/3 cup ketchup, 2 tbsp brown sugar, 1 tsp yellow mustard

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, crushed crackers, onion, bell pepper, eggs, milk, ketchup, Worcestershire sauce, garlic powder, salt, pepper, and paprika. Mix until just combined.
  3. Form the mixture into a loaf shape and place it on a lined baking sheet or in a loaf pan.
  4. In a small bowl, mix together ketchup, brown sugar, and mustard to make the glaze.
  5. Spread half of the glaze over the top of the meatloaf.
  6. Bake for 45 minutes, then spread the remaining glaze on top.
  7. Return to oven and bake for an additional 15–20 minutes, or until internal temperature reaches 160°F (71°C).
  8. Let rest 10 minutes before slicing and serving.

Notes

For extra moisture, avoid overmixing the meat mixture. This meatloaf pairs perfectly with mashed potatoes or green beans.
