- 2 lbs ground beef
- 1 cup crushed saltine crackers
- 1 small onion, finely chopped
- 1/2 green bell pepper, finely chopped
- 2 large eggs
- 3/4 cup whole milk
- 1/4 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- For the glaze: 1/3 cup ketchup, 2 tbsp brown sugar, 1 tsp yellow mustard
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, crushed crackers, onion, bell pepper, eggs, milk, ketchup, Worcestershire sauce, garlic powder, salt, pepper, and paprika. Mix until just combined.
- Form the mixture into a loaf shape and place it on a lined baking sheet or in a loaf pan.
- In a small bowl, mix together ketchup, brown sugar, and mustard to make the glaze.
- Spread half of the glaze over the top of the meatloaf.
- Bake for 45 minutes, then spread the remaining glaze on top.
- Return to oven and bake for an additional 15–20 minutes, or until internal temperature reaches 160°F (71°C).
- Let rest 10 minutes before slicing and serving.
Notes
For extra moisture, avoid overmixing the meat mixture. This meatloaf pairs perfectly with mashed potatoes or green beans.
