Description
Crispy on the outside and tender on the inside, these Southern-style salmon patties are a quick, comforting classic perfect for weeknight dinners.

- 1 (14.75-ounce) can pink salmon, drained and flaked
- 1/3 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1/2 cup cornmeal
- 1/4 cup all-purpose flour
- 2 large eggs
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon lemon juice
- Vegetable oil, for frying
Instructions
- In a large bowl, combine the salmon, onion, bell pepper, cornmeal, flour, eggs, mayonnaise, mustard, salt, pepper, paprika, and lemon juice.
- Mix until everything is well combined and forms a thick mixture.
- Shape the mixture into small patties, about 6–8 depending on size.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Fry the patties in batches for 3–4 minutes per side or until golden brown and crispy.
- Drain on paper towels before serving.
- Serve warm with your favorite dipping sauce or a side of greens.
Notes
For extra crispiness, chill the patties for 15 minutes before frying. You can substitute canned salmon with fresh cooked salmon if desired.
