  • 2 teaspoons pure vanilla extract
  • 2 cups granulated sugar
  • 3 large eggs, lightly beaten
  • One 3-ounce box lime gelatin
  • 2 cups heavy cream, cold
  • 1 tablespoon granulated sugar
  • 2 teaspoons pure vanilla extract
  • Green sanding sugar, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter and line with parchment paper.
  2. In a large bowl, cream together butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla.
  4. In a separate bowl whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to butter mixture, alternating with buttermilk, beginning and ending with dry ingredients. Mix just until combined.
  5. Pour batter into prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow cake to cool completely in the pan.
  6. While cake cools, prepare the lime gelatin according to package directions using 1 cup of boiling water. Let it cool slightly.
  7. Once the cake is cool, poke holes all over the surface with a fork or skewer. Slowly pour the lime gelatin over the cake, allowing it to soak in evenly.
  8. In a chilled bowl, beat heavy cream, 1 tablespoon sugar, and vanilla until stiff peaks form.
  9. Spread the whipped cream over the top of the cake. Sprinkle with green sanding sugar for a festive touch.
  10. Serve chilled or at room temperature. Enjoy!
