Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch pan.
- In a large bowl, whisk together oil, eggs, green food coloring, vinegar, and buttermilk until smooth.
- Add sugar and vanilla, mixing well.
- In another bowl combine flour, baking soda, and salt; gradually stir into wet ingredients until just combined.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let cool before cutting.
Notes
Tip: For a dairy-free version, substitute buttermilk with almond milk mixed with a tablespoon of lemon juice. You can also use a vegan egg replacer. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Freeze slices for up to 2 months.
