Description

Delicious, creamy Starbucks-style egg bites that are perfect for a protein-packed breakfast on the go.


Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded gruyere cheese
  • 1/4 cup cooked and crumbled bacon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon hot sauce (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and prepare a muffin tin with nonstick spray.
  2. In a blender, combine eggs, cottage cheese, gruyere cheese, salt, pepper, and hot sauce.
  3. Blend until smooth.
  4. Pour the mixture evenly into the muffin tin.
  5. Sprinkle crumbled bacon on top of each egg bite.
  6. Place the muffin tin in a larger baking dish and pour hot water into the dish to create a water bath.
  7. Bake for 25-30 minutes until the egg bites are set.
  8. Let them cool slightly before removing from the tin.

Notes

For a vegetarian version, omit the bacon and add spinach or roasted red peppers.
