Delicious, creamy Starbucks-style egg bites that are perfect for a protein-packed breakfast on the go.
Ingredients

- 4 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded gruyere cheese
- 1/4 cup cooked and crumbled bacon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon hot sauce (optional)
Instructions
- Preheat the oven to 300°F (150°C) and prepare a muffin tin with nonstick spray.
- In a blender, combine eggs, cottage cheese, gruyere cheese, salt, pepper, and hot sauce.
- Blend until smooth.
- Pour the mixture evenly into the muffin tin.
- Sprinkle crumbled bacon on top of each egg bite.
- Place the muffin tin in a larger baking dish and pour hot water into the dish to create a water bath.
- Bake for 25-30 minutes until the egg bites are set.
- Let them cool slightly before removing from the tin.
Notes
For a vegetarian version, omit the bacon and add spinach or roasted red peppers.
