A hearty and flavorful meatloaf stuffed with a savory herb mixture and baked to perfection. Comfort food at its finest!

			- 500g ground beef
- 200g ground pork
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 eggs
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 100g mozzarella or provolone, sliced
- 2 tbsp olive oil
Instructions
- Preheat oven to 180°C (350°F).
- In a bowl, soak breadcrumbs in milk for 5 minutes.
- In a large bowl, combine ground beef, ground pork, soaked breadcrumbs, eggs, onion, garlic, parsley, thyme, salt, and pepper. Mix until well combined.
- Place half the meat mixture in a loaf shape on a lined baking tray.
- Layer sliced cheese in the center, then cover with remaining meat mixture and shape into a loaf, sealing edges.
- Brush the top with olive oil.
- Bake for 45–50 minutes or until cooked through and golden brown.
- Let rest for 10 minutes before slicing and serving.
Notes
You can swap herbs depending on what you have on hand—rosemary or oregano also work great. Serve with mashed potatoes or roasted veggies for a complete meal.
