Stuffed Mushroom Eyeballs

Description

Creepy and delicious stuffed mushrooms that look like eyeballs, perfect for Halloween parties.


Ingredients

Scale
  • 12 large white mushrooms
  • 150g cream cheese
  • 1/2 cup grated mozzarella
  • 1/4 cup breadcrumbs
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 12 black olives (sliced)
  • Red food coloring or ketchup for ‘veins’
  • Salt and pepper

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Remove mushroom stems and finely chop them.
  3. Heat olive oil in a pan and sauté chopped stems with garlic.
  4. In a bowl, mix cream cheese, mozzarella, breadcrumbs, sautéed stems, salt, and pepper.
  5. Stuff each mushroom cap with the mixture.
  6. Top each mushroom with a slice of black olive to create the ‘eyeball’.
  7. Use a toothpick to draw ‘veins’ with food coloring or ketchup.
  8. Bake for 15–20 minutes until golden and bubbly.

Notes

Serve warm for the best spooky effect.
