Easy Stuffed Peppers Recipe

Description

Colorful bell peppers stuffed with a savory mixture of rice, ground beef, vegetables, and seasonings, baked until tender and flavorful.


Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked rice
  • 450g ground beef (or turkey)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. Heat olive oil in a pan, sauté onion and garlic until fragrant.
  4. Add ground beef and cook until browned.
  5. Stir in diced tomatoes, cooked rice, paprika, oregano, salt, and pepper. Simmer for 5 minutes.
  6. Stuff each bell pepper with the filling mixture.
  7. Place stuffed peppers in a baking dish and top with shredded cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake another 10 minutes until cheese is melted and bubbly.
  10. Serve hot, garnished with fresh herbs if desired.

Notes

You can substitute ground beef with turkey, chicken, or plant-based protein for variation.
