Colorful bell peppers stuffed with a savory mixture of rice, ground beef, vegetables, and seasonings, baked until tender and flavorful.
Ingredients

- 4 large bell peppers (any color)
- 1 cup cooked rice
- 450g ground beef (or turkey)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove seeds and membranes.
- Heat olive oil in a pan, sauté onion and garlic until fragrant.
- Add ground beef and cook until browned.
- Stir in diced tomatoes, cooked rice, paprika, oregano, salt, and pepper. Simmer for 5 minutes.
- Stuff each bell pepper with the filling mixture.
- Place stuffed peppers in a baking dish and top with shredded cheese.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake another 10 minutes until cheese is melted and bubbly.
- Serve hot, garnished with fresh herbs if desired.
Notes
You can substitute ground beef with turkey, chicken, or plant-based protein for variation.
