Description

A quick and delicious way to enjoy zucchini—crispy, cheesy, and perfectly roasted!


Ingredients

Scale
  • 600g / 1.2lb zucchinis (4 large, 5 medium)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp breadcrumbs
  • 2 tbsp grated parmesan (store-bought sandy type preferred)

Instructions

  1. Preheat oven to 220°C / 430°F (200°C fan).
  2. Cut zucchinis into thick batons.
  3. Place in a bowl, drizzle with olive oil, sprinkle salt and pepper, and toss to coat.
  4. Spread on a baking tray lined with parchment paper.
  5. Sprinkle with breadcrumbs and parmesan.
  6. Bake for 20 minutes until golden and tender.

Notes

Best served hot out of the oven. Great as a side dish or snack!
