A quick and delicious way to enjoy zucchini—crispy, cheesy, and perfectly roasted!
Ingredients
Scale
- 600g / 1.2lb zucchinis (4 large, 5 medium)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp breadcrumbs
- 2 tbsp grated parmesan (store-bought sandy type preferred)
Instructions
- Preheat oven to 220°C / 430°F (200°C fan).
- Cut zucchinis into thick batons.
- Place in a bowl, drizzle with olive oil, sprinkle salt and pepper, and toss to coat.
- Spread on a baking tray lined with parchment paper.
- Sprinkle with breadcrumbs and parmesan.
- Bake for 20 minutes until golden and tender.
Notes
Best served hot out of the oven. Great as a side dish or snack!
