  • 3 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 medium potatoes, diced

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and carrots, sauté for 5 minutes.
  2. Stir in garlic and cabbage, cook until slightly softened (about 8 minutes).
  3. Add diced tomatoes, tomato paste, and potatoes. Stir well to combine.
  4. Pour in vegetable broth, vinegar, and brown sugar. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 25 minutes or until potatoes are tender.
  6. Season with salt and pepper. Serve hot with crusty bread.
