- 1/4 cup red onion, finely chopped
- 1 small jalapeno, finely minced (remove seeds to reduce heat if desired)
- 1 roasted green chili, minced
- 1/4 cup fresh cilantro, chopped or 2 tablespoons diced dried cilantro
- 2 limes, juiced
- Salt to taste
Instructions
- Combine peaches, tomatoes, red onion, jalapeno, and roasted green chili in a bowl.
- Add the cilantro and lime juice.
- Stir everything together until well mixed.
- Season with salt to taste.
- Chill for at least 30 minutes before serving to let the flavors meld.
