Description

Ingredients

  • 2 tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeno, finely minced (remove seeds to reduce heat if desired)
  • 1 roasted green chili, minced
  • 1/4 cup fresh cilantro, chopped or 2 tablespoons diced dried cilantro
  • 2 limes, juiced
  • Salt to taste

Instructions

  1. Combine peaches, tomatoes, red onion, jalapeno, and roasted green chili in a bowl.
  2. Add the cilantro and lime juice.
  3. Stir everything together until well mixed.
  4. Season with salt to taste.
  5. Chill for at least 30 minutes before serving to let the flavors meld.
