Description

A hearty and protein-packed taco bowl featuring roasted sweet potatoes, seasoned ground turkey, fresh veggies, and creamy cottage cheese for a healthy twist on taco night.


Ingredients

  • 450g ground turkey
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 2 tsp taco seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup cottage cheese
  • 1 cup cooked brown rice or quinoa
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice

Instructions

  1. Preheat oven to 200°C (400°F). Toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, salt, and pepper. Roast for 20–25 minutes until golden and tender.
  2. In a skillet, heat 1 tbsp olive oil over medium heat. Add ground turkey and taco seasoning, cooking until browned and cooked through.
  3. Prepare brown rice or quinoa according to package directions.
  4. Assemble bowls: start with rice or quinoa, then layer roasted sweet potatoes, seasoned turkey, black beans, corn, cherry tomatoes, red onion, and avocado.
  5. Add a generous spoonful of cottage cheese on top, drizzle with lime juice, and garnish with fresh cilantro.

Notes

For a spicier version, add jalapeño slices or drizzle with hot sauce. Swap cottage cheese for Greek yogurt if preferred.
