A hearty and protein-packed taco bowl featuring roasted sweet potatoes, seasoned ground turkey, fresh veggies, and creamy cottage cheese for a healthy twist on taco night.

- 450g ground turkey
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 2 tsp taco seasoning
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1 cup cottage cheese
- 1 cup cooked brown rice or quinoa
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/2 red onion, finely chopped
- 1/2 cup cherry tomatoes, halved
- 1 avocado, sliced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
Instructions
- Preheat oven to 200°C (400°F). Toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, salt, and pepper. Roast for 20–25 minutes until golden and tender.
- In a skillet, heat 1 tbsp olive oil over medium heat. Add ground turkey and taco seasoning, cooking until browned and cooked through.
- Prepare brown rice or quinoa according to package directions.
- Assemble bowls: start with rice or quinoa, then layer roasted sweet potatoes, seasoned turkey, black beans, corn, cherry tomatoes, red onion, and avocado.
- Add a generous spoonful of cottage cheese on top, drizzle with lime juice, and garnish with fresh cilantro.
Notes
For a spicier version, add jalapeño slices or drizzle with hot sauce. Swap cottage cheese for Greek yogurt if preferred.
