Description

A nourishing and balanced bowl with roasted sweet potatoes, seasoned ground turkey, creamy avocado, and fresh toppings for a wholesome meal.


Ingredients

  • 450g ground turkey
  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 1 avocado, sliced
  • 1 cup cooked quinoa or rice
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Preheat oven to 200°C (400°F). Toss cubed sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until tender and golden.
  2. In a large skillet, heat 1 tbsp olive oil over medium heat. Add ground turkey, season with cumin, chili powder, salt, and pepper, and cook until browned and cooked through.
  3. Prepare quinoa or rice according to package directions.
  4. Assemble bowls: start with a base of quinoa or rice, add roasted sweet potatoes, ground turkey, avocado slices, red onion, and cherry tomatoes.
  5. Drizzle with lime juice and sprinkle with fresh cilantro before serving.

Notes

For extra creaminess, add a drizzle of tahini or Greek yogurt sauce on top.
