- 450g ground turkey
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 1 avocado, sliced
- 1 cup cooked quinoa or rice
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 2 tbsp lime juice
- 2 tbsp fresh cilantro, chopped
Instructions
- Preheat oven to 200°C (400°F). Toss cubed sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until tender and golden.
- In a large skillet, heat 1 tbsp olive oil over medium heat. Add ground turkey, season with cumin, chili powder, salt, and pepper, and cook until browned and cooked through.
- Prepare quinoa or rice according to package directions.
- Assemble bowls: start with a base of quinoa or rice, add roasted sweet potatoes, ground turkey, avocado slices, red onion, and cherry tomatoes.
- Drizzle with lime juice and sprinkle with fresh cilantro before serving.
Notes
For extra creaminess, add a drizzle of tahini or Greek yogurt sauce on top.
