  • 2 ½ cups oat flour
  • ½ cup rolled oats

  • 1 large egg
  • 2 tablespoons coconut oil
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper
  2. In large bowl, mix mashed sweet potato, peanut butter, egg, and coconut oil until smooth
  3. Gradually add oat flour and rolled oats until dough forms (add water if too dry)
  4. Roll dough to ¼” thickness on floured surface
  5. Cut shapes with heart-shaped cookie cutter
  6. Bake 20-25 minutes until edges are golden
  7. Cool completely on wire rack before serving

Notes
