- ½ cup rolled oats

- 1 teaspoon cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheet with parchment paper
- In large bowl, mix mashed sweet potato, peanut butter, egg, and coconut oil until smooth
- Gradually add oat flour and rolled oats until dough forms (add water if too dry)
- Roll dough to ¼” thickness on floured surface
- Cut shapes with heart-shaped cookie cutter
- Bake 20-25 minutes until edges are golden
- Cool completely on wire rack before serving
