			- 1 lb elbow macaroni
 - 1 lb ground beef
 - 1 packet taco seasoning
 - 2 cups shredded cheddar cheese
 - 1 cup shredded Monterey Jack cheese
 - 2 cups milk
 - 2 tbsp butter
 - 2 tbsp all-purpose flour
 - 1/2 cup salsa
 - 1/2 cup sour cream
 - 1/4 cup chopped green onions
 - 1/4 cup chopped fresh cilantro
 - Salt and pepper to taste
 
Instructions
- Cook macaroni according to package directions, then drain and set aside.
 - In a skillet, cook ground beef until browned. Drain excess fat.
 - Stir in taco seasoning and a splash of water. Simmer 2-3 minutes.
 - In a saucepan, melt butter and whisk in flour to form a roux.
 - Gradually whisk in milk, cooking until thickened.
 - Stir in cheddar and Monterey Jack cheeses until melted and smooth.
 - Add salsa and sour cream, stirring to combine.
 - Mix cooked pasta, taco beef, and cheese sauce together.
 - Season with salt and pepper to taste.
 - Garnish with green onions and cilantro before serving.
 
Notes
For extra flavor, add jalapeños, crushed tortilla chips, or diced tomatoes on top before serving.
