Description

A hearty and flavorful Taco Soup loaded with ground beef, beans, corn, tomatoes, and Tex-Mex spices. Perfect for a cozy dinner or a crowd-pleasing meal.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning
  • 3 cups beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, fresh cilantro

Instructions

  1. In a large pot over medium heat, cook ground beef until browned. Drain excess fat.
  2. Add diced onion and minced garlic, cooking until softened.
  3. Stir in taco seasoning and mix well.
  4. Add black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth.
  5. Bring mixture to a boil, then reduce heat and let simmer for 20–25 minutes.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.

Notes

This soup is even better the next day as the flavors deepen. You can substitute ground turkey or chicken for beef.
