- 20 jumbo pasta shells
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup ricotta cheese
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 2 green onions, chopped
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta shells according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Stir in taco seasoning and 1/2 cup water, simmering for 2–3 minutes.
- Add salsa and mix until combined.
- In a bowl, mix ricotta cheese with half of the cheddar cheese and mozzarella.
- Stuff each pasta shell with a spoonful of the beef mixture and cheese mixture.
- Arrange stuffed shells in a baking dish.
- Top with remaining cheddar and mozzarella cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 10 minutes until cheese is bubbly.
- Garnish with sour cream, green onions, and cilantro before serving.
Notes
For extra flavor, drizzle with hot sauce or add jalapeños before baking. You can also substitute ground turkey or chicken for the beef.
