Description
A hearty, one-pan Tex-Mex dinner packed with seasoned ground beef, tender potatoes, bell peppers, and melted cheese. Perfect for a quick and comforting weeknight meal.

- 1 lb ground beef
- 3 medium russet potatoes, diced
- 1 small onion, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Fresh cilantro, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10–12 minutes until golden and tender. Remove and set aside.
- In the same skillet, add ground beef and cook until browned. Drain excess fat if needed.
- Add onion, bell peppers, and garlic to the beef. Cook for 5 minutes until softened.
- Stir in chili powder, cumin, paprika, salt, and black pepper.
- Return cooked potatoes to the skillet and mix everything well.
- Sprinkle shredded cheese evenly over the top. Cover and cook for 2–3 minutes until cheese melts.
- Garnish with chopped cilantro if desired. Serve warm.
Notes
To make it spicier, add a pinch of cayenne or top with sliced jalapeños before serving.
