Description

A hearty, one-pan Tex-Mex dinner packed with seasoned ground beef, tender potatoes, bell peppers, and melted cheese. Perfect for a quick and comforting weeknight meal.


Ingredients

  • 1 lb ground beef
  • 3 medium russet potatoes, diced
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10–12 minutes until golden and tender. Remove and set aside.
  2. In the same skillet, add ground beef and cook until browned. Drain excess fat if needed.
  3. Add onion, bell peppers, and garlic to the beef. Cook for 5 minutes until softened.
  4. Stir in chili powder, cumin, paprika, salt, and black pepper.
  5. Return cooked potatoes to the skillet and mix everything well.
  6. Sprinkle shredded cheese evenly over the top. Cover and cook for 2–3 minutes until cheese melts.
  7. Garnish with chopped cilantro if desired. Serve warm.

Notes

To make it spicier, add a pinch of cayenne or top with sliced jalapeños before serving.
