A quick and hearty Tex-Mex Ground Turkey Skillet loaded with seasoned turkey, black beans, corn, peppers, and melty cheese. Perfect for a weeknight dinner!

- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14 oz) diced tomatoes with green chilies
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar or Mexican blend cheese
- Fresh cilantro, chopped (for garnish)
- Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper, sauté until softened.
- Stir in ground turkey and cook until browned, breaking apart as it cooks.
- Season with chili powder, cumin, smoked paprika, salt, and pepper.
- Add corn, black beans, and diced tomatoes with green chilies. Stir to combine.
- Simmer for 5-7 minutes until heated through and flavors meld together.
- Sprinkle shredded cheese evenly over the skillet.
- Cover and cook for 2-3 minutes until cheese melts.
- Remove from heat and garnish with fresh cilantro.
- Serve with lime wedges and enjoy as is, or with tortillas or rice.
Notes
For extra flavor, top with avocado slices, jalapeños, or sour cream. This dish can also be turned into burrito or taco filling!
