This Thanksgiving Caesar Salad is a festive twist on the classic. Crisp romaine, creamy homemade dressing, and crunchy croutons are finished with roasted squash and shaved Parmesan—perfectly balancing rich holiday dishes.

- 2 heads romaine lettuce, chopped
- 1 cup roasted butternut squash cubes
- 1/2 cup shaved Parmesan cheese
- 1 cup homemade or store-bought croutons
- 1/2 cup Caesar dressing (see note)
- Fresh cracked black pepper, to taste
- Optional: toasted pecans or walnuts for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss squash cubes with olive oil, salt, and pepper. Roast for 20–25 minutes or until tender and slightly golden. Let cool.
- In a large salad bowl, combine chopped romaine, roasted squash, Parmesan, and croutons.
- Add Caesar dressing and toss until everything is evenly coated.
- Top with cracked black pepper and optional nuts if using.
- Serve immediately as a fresh and crisp holiday starter or side.
Notes
Use homemade Caesar dressing with anchovy, lemon, garlic, and Dijon for the best flavor. Add grilled chicken or turkey for a heartier version.
