Description

Thanksgiving Corn Casserole is a rich, creamy, and slightly sweet side dish that’s a holiday must-have. Made with corn, creamed corn, and a buttery cornmeal base, it’s comfort food at its best.


Ingredients

  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 box (8.5 oz) corn muffin mix (such as Jiffy)
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch or similar-sized baking dish.
  2. In a large mixing bowl, combine corn, creamed corn, sour cream, melted butter, eggs, salt, and pepper.
  3. Stir in the corn muffin mix until fully incorporated.
  4. Fold in the shredded cheddar cheese, if using.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 45–50 minutes, or until the center is set and the top is lightly golden.
  7. Let cool slightly before serving warm.

Notes

You can prepare this dish a day ahead and reheat before serving. For a sweeter version, add 1 tablespoon of sugar to the batter.
