Description
Thanksgiving Corn Casserole is a rich, creamy, and slightly sweet side dish that’s a holiday must-have. Made with corn, creamed corn, and a buttery cornmeal base, it’s comfort food at its best.

- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) creamed corn
- 1 cup sour cream
- 1/2 cup melted butter
- 1 box (8.5 oz) corn muffin mix (such as Jiffy)
- 2 eggs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch or similar-sized baking dish.
- In a large mixing bowl, combine corn, creamed corn, sour cream, melted butter, eggs, salt, and pepper.
- Stir in the corn muffin mix until fully incorporated.
- Fold in the shredded cheddar cheese, if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 45–50 minutes, or until the center is set and the top is lightly golden.
- Let cool slightly before serving warm.
Notes
You can prepare this dish a day ahead and reheat before serving. For a sweeter version, add 1 tablespoon of sugar to the batter.
