Description

Crispy and golden egg rolls filled with all your favorite Thanksgiving leftovers—turkey, stuffing, mashed potatoes, and cranberry sauce—perfect for a fun and delicious holiday snack!


Ingredients

  • 2 cups cooked turkey, shredded
  • 1 cup mashed potatoes
  • 1 cup stuffing
  • 1/2 cup cranberry sauce
  • 1 package egg roll wrappers
  • Vegetable oil for frying
  • 1 egg, beaten (for sealing)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine turkey, mashed potatoes, stuffing, and cranberry sauce. Mix until evenly distributed.
  2. Lay out one egg roll wrapper with a corner facing you.
  3. Spoon 2 tablespoons of the filling into the center of the wrapper.
  4. Fold the bottom corner up over the filling, then fold in the sides and roll tightly.
  5. Brush the top corner with beaten egg to seal the edge.
  6. Heat vegetable oil in a deep pan to 350°F (175°C).
  7. Fry the egg rolls in batches for 3–4 minutes or until golden brown.
  8. Remove and drain on paper towels.
  9. Serve warm with extra cranberry sauce or gravy for dipping.

Notes

These are a perfect way to use Thanksgiving leftovers! You can also bake them at 400°F for 15–20 minutes for a lighter version.
