Crispy and golden egg rolls filled with all your favorite Thanksgiving leftovers—turkey, stuffing, mashed potatoes, and cranberry sauce—perfect for a fun and delicious holiday snack!
Ingredients

- 2 cups cooked turkey, shredded
- 1 cup mashed potatoes
- 1 cup stuffing
- 1/2 cup cranberry sauce
- 1 package egg roll wrappers
- Vegetable oil for frying
- 1 egg, beaten (for sealing)
- Salt and pepper to taste
Instructions
- In a large bowl, combine turkey, mashed potatoes, stuffing, and cranberry sauce. Mix until evenly distributed.
- Lay out one egg roll wrapper with a corner facing you.
- Spoon 2 tablespoons of the filling into the center of the wrapper.
- Fold the bottom corner up over the filling, then fold in the sides and roll tightly.
- Brush the top corner with beaten egg to seal the edge.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Fry the egg rolls in batches for 3–4 minutes or until golden brown.
- Remove and drain on paper towels.
- Serve warm with extra cranberry sauce or gravy for dipping.
Notes
These are a perfect way to use Thanksgiving leftovers! You can also bake them at 400°F for 15–20 minutes for a lighter version.
