These Thanksgiving Leftover Balls are the perfect way to turn holiday leftovers into a crispy, golden, and delicious snack or appetizer.
Ingredients

- 2 cups leftover mashed potatoes
- 1 cup leftover stuffing
- 1 cup shredded leftover turkey
- 1/2 cup cranberry sauce
- 1/2 cup shredded cheddar cheese
- 1 egg, beaten
- 1 cup panko breadcrumbs
- 1/2 cup flour
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine mashed potatoes, stuffing, turkey, cheddar cheese, salt, and pepper.
- Form the mixture into small bite-sized balls.
- Set up a breading station with flour, beaten egg, and panko breadcrumbs.
- Roll each ball in flour, dip in egg, then coat with panko breadcrumbs.
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Fry the balls in batches until golden and crispy, about 3-4 minutes.
- Remove and drain on paper towels.
- Serve warm with cranberry sauce for dipping.
Notes
You can also bake these in the oven at 400°F (200°C) for 15-20 minutes for a lighter version.
