Description

These Thanksgiving Stuffed Potatoes are everything you love about the holiday — mashed potatoes, stuffing, turkey, and cranberry — all packed into a crispy potato skin. The perfect way to repurpose leftovers or wow guests with something new.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked turkey, shredded or chopped
  • 1 cup prepared stuffing
  • 1/2 cup mashed potatoes
  • 1/4 cup cranberry sauce
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp milk
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and pierce potatoes with a fork. Bake for 45–50 minutes or until tender. Let cool slightly.
  3. Cut potatoes in half lengthwise and scoop out the insides into a bowl, leaving a thin shell.
  4. Mash the scooped potato with butter, milk, salt, and pepper. Stir in the turkey and stuffing.
  5. Spoon the mixture back into the potato skins.
  6. Top with shredded cheese and bake for another 10–15 minutes, until heated through and cheese is melted.
  7. Drizzle with cranberry sauce and sprinkle with chopped parsley before serving.

Notes

These are great for using up Thanksgiving leftovers, but you can make them any time using rotisserie chicken and boxed stuffing too.
