- 20 jumbo pasta shells
- 2 cups cooked turkey, shredded
- 1 1/2 cups prepared stuffing
- 1/2 cup whole berry cranberry sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 1/2 cups turkey or chicken gravy
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package directions. Drain and set aside.
- In a large bowl, mix together turkey, stuffing, cranberry sauce, mozzarella, Parmesan, thyme, salt, and pepper until well combined.
- Lightly grease a baking dish with olive oil.
- Spoon the filling into each shell and arrange in the baking dish.
- Pour the gravy evenly over the stuffed shells.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes, until heated through and slightly golden.
- Garnish with chopped parsley before serving if desired.
Notes
This is a great way to use up Thanksgiving leftovers! You can swap turkey with rotisserie chicken and use store-bought stuffing and gravy to save time.
