Ingredients

  • 1 packet (2¼ tsp) active dry yeast
  • 2 tsp honey
  • 2½ cups warm water
  • 5 cups all-purpose flour
  • 1 tbsp kosher salt
  • 6 tbsp olive oil, divided
  • 2 tbsp butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 garlic cloves, minced
  • 1 tbsp fresh sage, chopped
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • Flaky salt, for topping

Instructions

  1. In a large bowl, combine yeast, honey, and warm water. Let sit for 5 minutes until foamy.
  2. Add flour and kosher salt. Mix until a shaggy dough forms.
  3. Pour in 2 tablespoons olive oil and knead the dough in the bowl until smooth, about 5 minutes.
  4. Cover and let rise in a warm place for 1-2 hours, or until doubled in size.
  5. Meanwhile, in a skillet, melt butter and 2 tablespoons olive oil over medium heat. Add onion, celery, and garlic. Sauté until soft, about 7 minutes.
  6. Add sage, thyme, salt, and pepper. Cook another 2 minutes. Let cool.
  7. Grease a 9×13-inch baking pan with 1 tablespoon olive oil. Stretch the risen dough into the pan.
  8. Spread stuffing mixture over the top, pressing gently into the dough.
  9. Cover and let rise again for 30 minutes.
  10. Preheat oven to 425°F (220°C).
  11. Drizzle remaining 1 tablespoon olive oil over the dough and sprinkle with flaky salt.
  12. Bake for 25–30 minutes or until golden brown and cooked through.
  13. Cool slightly before slicing and serving.

Notes

For extra flavor, try adding chopped cooked sausage or dried cranberries to the stuffing mixture.
