- 1 packet (2¼ tsp) active dry yeast
- 2 tsp honey
- 2½ cups warm water
- 5 cups all-purpose flour
- 1 tbsp kosher salt
- 6 tbsp olive oil, divided
- 2 tbsp butter
- 1 cup diced onion
- 1 cup diced celery
- 2 garlic cloves, minced
- 1 tbsp fresh sage, chopped
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
- Flaky salt, for topping
Instructions
- In a large bowl, combine yeast, honey, and warm water. Let sit for 5 minutes until foamy.
- Add flour and kosher salt. Mix until a shaggy dough forms.
- Pour in 2 tablespoons olive oil and knead the dough in the bowl until smooth, about 5 minutes.
- Cover and let rise in a warm place for 1-2 hours, or until doubled in size.
- Meanwhile, in a skillet, melt butter and 2 tablespoons olive oil over medium heat. Add onion, celery, and garlic. Sauté until soft, about 7 minutes.
- Add sage, thyme, salt, and pepper. Cook another 2 minutes. Let cool.
- Grease a 9×13-inch baking pan with 1 tablespoon olive oil. Stretch the risen dough into the pan.
- Spread stuffing mixture over the top, pressing gently into the dough.
- Cover and let rise again for 30 minutes.
- Preheat oven to 425°F (220°C).
- Drizzle remaining 1 tablespoon olive oil over the dough and sprinkle with flaky salt.
- Bake for 25–30 minutes or until golden brown and cooked through.
- Cool slightly before slicing and serving.
Notes
For extra flavor, try adding chopped cooked sausage or dried cranberries to the stuffing mixture.
