- 1 lb ground turkey
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup carrot, grated
- 2 cloves garlic, minced
- 1 large egg
- 1/4 cup milk
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions
- Preheat oven to 375°F (190°C). Grease or line a muffin tin.
- In a large skillet, sauté onion, celery, carrot, and garlic until softened, about 5 minutes. Allow to cool slightly.
- In a large mixing bowl, combine ground turkey, breadcrumbs, sautéed vegetables, egg, milk, parsley, sage, thyme, salt, and pepper. Mix gently until just combined.
- Divide mixture evenly into muffin tin cups, pressing lightly to form mini meatloaves.
- In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard. Spread glaze over each mini meatloaf.
- Bake for 25–30 minutes, or until meatloaves reach an internal temperature of 165°F (74°C).
- Let rest 5 minutes before serving. Garnish with extra parsley if desired.

These mini meatloaves pair wonderfully with mashed potatoes, green beans, or cranberry sauce for a full Thanksgiving-inspired meal.
