Ingredients

  • 1 lb ground turkey
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrot, grated
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a large skillet, sauté onion, celery, carrot, and garlic until softened, about 5 minutes. Allow to cool slightly.
  3. In a large mixing bowl, combine ground turkey, breadcrumbs, sautéed vegetables, egg, milk, parsley, sage, thyme, salt, and pepper. Mix gently until just combined.
  4. Divide mixture evenly into muffin tin cups, pressing lightly to form mini meatloaves.
  5. In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard. Spread glaze over each mini meatloaf.
  6. Bake for 25–30 minutes, or until meatloaves reach an internal temperature of 165°F (74°C).
  7. Let rest 5 minutes before serving. Garnish with extra parsley if desired.

Notes

These mini meatloaves pair wonderfully with mashed potatoes, green beans, or cranberry sauce for a full Thanksgiving-inspired meal.
