- 1 onion, chopped
- 3 cloves garlic, minced
- 1 lb ground beef
- 1 (15 oz) can kidney beans, drained
- 1 (15 oz) can black beans, drained
- 1 (28 oz) can crushed tomatoes
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- 1 cup beef broth
- Chopped cilantro, sour cream, shredded cheese for topping
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until soft, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Drain excess fat if needed.
- Add chili powder, cumin, paprika, cayenne, salt, and pepper. Stir to combine.
- Add tomato paste, crushed tomatoes, beans, and beef broth.
- Bring to a boil, then reduce heat to low and simmer uncovered for 30–40 minutes, stirring occasionally.
