  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can black beans, drained
  • 1 (28 oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup beef broth
  • Chopped cilantro, sour cream, shredded cheese for topping

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft, about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add ground beef and cook until browned, breaking it apart with a spoon.
  5. Drain excess fat if needed.
  6. Add chili powder, cumin, paprika, cayenne, salt, and pepper. Stir to combine.
  7. Add tomato paste, crushed tomatoes, beans, and beef broth.
  8. Bring to a boil, then reduce heat to low and simmer uncovered for 30–40 minutes, stirring occasionally.
