Description
These ground beef enchiladas are packed with flavor, smothered in a rich red enchilada sauce, and topped with melted cheese. A comforting Mexican-inspired dinner favorite!
Ingredients

			- 1 lb ground beef
 - 1 small onion, chopped
 - 2 cloves garlic, minced
 - 1 (10 oz) can red enchilada sauce
 - 1 tsp ground cumin
 - 1/2 tsp chili powder
 - Salt and pepper to taste
 - 1 cup shredded cheddar cheese
 - 1 cup shredded Monterey Jack cheese
 - 8 small flour tortillas
 - 1 tbsp olive oil
 - Chopped cilantro and sour cream for garnish (optional)
 
Instructions
- Preheat oven to 375°F (190°C).
 - Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft.
 - Stir in garlic and cook for 1 minute.
 - Add ground beef and cook until browned, breaking it apart with a spoon. Season with cumin, chili powder, salt, and pepper.
 - Stir in 1/2 cup of enchilada sauce and remove from heat.
 - Spread a thin layer of enchilada sauce on the bottom of a baking dish.
 - Spoon beef mixture into tortillas, top with a little shredded cheese, roll up, and place seam side down in the dish.
 - Pour remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
 - Bake for 20–25 minutes, until cheese is melted and bubbly.
 - Garnish with cilantro and sour cream if desired. Serve warm.
 
Notes
Make these ahead and refrigerate before baking. They freeze well too! Try adding black beans or corn to the filling for extra texture.
