Ingredients

  • 5 roma tomatoes, peeled and sliced
  • 10 fresh basil leaves, chopped
  • 1/2 cup green onion (or red onion), chopped
  • 1 9-inch pre-baked pie crust
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly shredded cheddar cheese
  • 3/4 cup mayonnaise (or half mayo, half Greek yogurt)
  • 2 Tablespoons freshly grated parmesan cheese
  • Salt and freshly ground black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place sliced tomatoes in a single layer on paper towels and lightly salt them. Let sit for 10 minutes to draw out moisture.
  3. Layer the tomatoes, basil, and onion in the pre-baked pie crust.
  4. In a medium bowl, mix together mozzarella, cheddar, mayonnaise, and parmesan.
  5. Spread the cheese mixture evenly over the tomato mixture.
  6. Season with freshly ground black pepper.
  7. Bake in the preheated oven for 30 minutes or until top is golden and bubbly.
  8. Let cool slightly before serving.

Notes

Use ripe but firm tomatoes for best results. This pie is delicious warm or at room temperature.
