  • 1 cup Dutch processed cocoa powder (85 grams)
  • 1 cup dark chocolate (170 grams)
  • 2 1/4 cup light brown sugar (454 grams)
  • 1 tbsp vanilla extract
  • 2 2/3 cup all-purpose flour (320 grams)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp sea salt (can omit if using salted butter)
  • 1 1/4 cup high protein vegan yogurt (300 grams)

Vegan Chocolate Buttercream Frosting

  • 1 3/4 cup vegan butter (400 grams)
  • 1/2 cup Dutch processed cocoa powder (45 grams)
  • 1/3 cup melted dark chocolate (50 grams)
  • 1 1/2 cup light brown sugar (300 grams)
  • 1 tsp espresso powder
  • 2 tbsp vegan heavy cream

Instructions

  1. Preheat the oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans and line the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another mixing bowl, combine the non-dairy milk, coffee, and vanilla extract.
  4. Add the sugar, cocoa powder, and melted chocolate to the dry ingredients and whisk until well combined.
  5. Pour in the non-dairy milk mixture and whisk until smooth.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once the cakes are cool, you can frost and decorate them as desired.

Notes
