Description

A hearty and flavorful vegan meatloaf made with lentils, vegetables, and savory seasonings, perfect for a comforting dinner.


Ingredients

  • 2 cups cooked green or brown lentils
  • 1 cup breadcrumbs
  • 1/2 cup rolled oats
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, grated
  • 1/2 cup celery, finely chopped
  • 3 tbsp ground flaxseed + 6 tbsp water (flax egg)
  • 3 tbsp tomato paste
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup ketchup (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
  2. Prepare flax eggs by mixing ground flaxseed with water and let sit for 5 minutes.
  3. In a skillet, heat olive oil and sauté onion, garlic, carrot, and celery until softened.
  4. In a large bowl, mash lentils slightly, leaving some texture.
  5. Add sautéed vegetables, breadcrumbs, oats, flax eggs, tomato paste, soy sauce, smoked paprika, thyme, salt, and pepper.
  6. Mix well until combined.
  7. Transfer mixture into loaf pan and press down firmly.
  8. Spread ketchup evenly on top.
  9. Bake for 45–50 minutes until firm and golden.
  10. Let cool for 10 minutes before slicing and serving.

Notes

For best results, let the meatloaf rest before slicing to prevent crumbling. Pairs well with mashed potatoes and gravy.
