A hearty and flavorful vegan meatloaf made with lentils, vegetables, and savory seasonings, perfect for a comforting dinner.
Ingredients

- 2 cups cooked green or brown lentils
- 1 cup breadcrumbs
- 1/2 cup rolled oats
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, grated
- 1/2 cup celery, finely chopped
- 3 tbsp ground flaxseed + 6 tbsp water (flax egg)
- 3 tbsp tomato paste
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 cup ketchup (for topping)
Instructions
- Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
- Prepare flax eggs by mixing ground flaxseed with water and let sit for 5 minutes.
- In a skillet, heat olive oil and sauté onion, garlic, carrot, and celery until softened.
- In a large bowl, mash lentils slightly, leaving some texture.
- Add sautéed vegetables, breadcrumbs, oats, flax eggs, tomato paste, soy sauce, smoked paprika, thyme, salt, and pepper.
- Mix well until combined.
- Transfer mixture into loaf pan and press down firmly.
- Spread ketchup evenly on top.
- Bake for 45–50 minutes until firm and golden.
- Let cool for 10 minutes before slicing and serving.
Notes
For best results, let the meatloaf rest before slicing to prevent crumbling. Pairs well with mashed potatoes and gravy.
