Ingredients
- 2 cups (60g) fresh spinach
- 1 cup (150g) frozen pineapple chunks
- ¾ cup (180ml) unsweetened soy milk†
- ½ cup (50g) frozen cucumber slices
- ½ avocado
- 2 Tbsp (32g) almond butter
- 1 Tbsp (15ml) maple syrup
- 1 Tbsp (15ml) pure vanilla extract
- Optional toppings: fresh mixed berries, whole chia seeds, unsweetened shredded coconut
Instructions
- Combine spinach, pineapple, cucumber, avocado, almond butter, maple syrup, and vanilla extract in a blender.
- Blend until smooth and creamy, adding more soy milk if needed to reach desired consistency.
- Pour into a bowl.
- Top with your favorite toppings like berries, chia seeds, or shredded coconut.
Notes
For a sweeter smoothie, add more maple syrup. You can substitute almond butter with peanut butter or sunflower seed butter. Store leftovers in an airtight container in the refrigerator for up to 2 days. If using fresh pineapple, add a few ice cubes to the blender for a colder smoothie.
