  • 2 cups (60g) fresh spinach
  • 1 cup (150g) frozen pineapple chunks
  • ¾ cup (180ml) unsweetened soy milk†
  • ½ cup (50g) frozen cucumber slices
  • ½ avocado
  • 2 Tbsp (32g) almond butter
  • 1 Tbsp (15ml) maple syrup
  • 1 Tbsp (15ml) pure vanilla extract
  • Optional toppings: fresh mixed berries, whole chia seeds, unsweetened shredded coconut

Instructions

  1. Combine spinach, pineapple, cucumber, avocado, almond butter, maple syrup, and vanilla extract in a blender.
  2. Blend until smooth and creamy, adding more soy milk if needed to reach desired consistency.
  3. Pour into a bowl.
  4. Top with your favorite toppings like berries, chia seeds, or shredded coconut.

Notes

For a sweeter smoothie, add more maple syrup. You can substitute almond butter with peanut butter or sunflower seed butter. Store leftovers in an airtight container in the refrigerator for up to 2 days. If using fresh pineapple, add a few ice cubes to the blender for a colder smoothie.
