Ingredients

  • 60 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 medium onions, chopped
  • 6 cups chicken or vegetable broth
  • 2 medium potatoes, peeled and diced
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place 40 cloves of garlic on a baking sheet, drizzle with olive oil, and roast for 30–35 minutes until soft and caramelized.
  3. In a large pot, melt butter and sauté onions until translucent.
  4. Add roasted garlic, remaining 20 raw garlic cloves, broth, and potatoes.
  5. Simmer for 20–25 minutes until potatoes are tender.
  6. Blend the soup with an immersion blender until smooth and creamy.
  7. Stir in heavy cream, thyme, salt, and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

Roasting the garlic brings out a sweet, nutty flavor, while the raw cloves balance with a bold garlicky punch. Serve with crusty bread for a comforting meal.
