- 60 cloves garlic, peeled
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 medium onions, chopped
- 6 cups chicken or vegetable broth
- 2 medium potatoes, peeled and diced
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Place 40 cloves of garlic on a baking sheet, drizzle with olive oil, and roast for 30–35 minutes until soft and caramelized.
- In a large pot, melt butter and sauté onions until translucent.
- Add roasted garlic, remaining 20 raw garlic cloves, broth, and potatoes.
- Simmer for 20–25 minutes until potatoes are tender.
- Blend the soup with an immersion blender until smooth and creamy.
- Stir in heavy cream, thyme, salt, and pepper.
- Serve hot, garnished with fresh parsley.
Notes
