- 2 cans (28 oz each) whole San Marzano tomatoes
- 4 tablespoons extra virgin olive oil
- 6 garlic cloves, minced
- 1 small yellow onion, finely diced
- 1 teaspoon sugar
- 1 teaspoon dried oregano
- 1 handful fresh basil leaves
- Salt to taste
- Black pepper to taste
- 1 tablespoon tomato paste
Instructions
- Heat olive oil in a large saucepan over medium heat.
- Add diced onion and cook until soft and translucent.
- Stir in minced garlic and cook for 1 minute.
- Add tomato paste and cook for another minute to deepen the flavor.
- Pour in the San Marzano tomatoes, crushing them gently with a spoon.
- Stir in oregano, sugar, salt, and black pepper.
- Add fresh basil leaves.
- Reduce heat to low and simmer uncovered for 45–60 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
- Blend for a smooth consistency or leave chunky if preferred.
