Description

A Southern classic tomato pie with juicy ripe tomatoes, fresh basil, and a cheesy mayo topping baked in a flaky pie crust.


Ingredients

  • 1 9 inch deep dish frozen pie shell
  • 1/4 cup shredded mozzarella or shredded cheddar cheese
  • 4 large ripe tomatoes, sliced
  • 1/3 cup fresh basil, chopped
  • 3/4 cup Duke’s mayonnaise
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Bake the pie shell for 10 minutes, then let it cool.
  3. Sprinkle the bottom of the shell with 1/4 cup of cheese.
  4. Layer sliced tomatoes over the cheese and sprinkle with chopped basil.
  5. In a bowl, mix mayonnaise, shredded cheddar, and shredded mozzarella.
  6. Spread the mayo-cheese mixture evenly over the tomatoes.
  7. Bake for 30-35 minutes or until golden and bubbly.
  8. Let it cool for 10 minutes before slicing and serving.

Notes

Use ripe, firm tomatoes and pat dry with paper towels to avoid a soggy crust.
