Description
A Southern classic tomato pie with juicy ripe tomatoes, fresh basil, and a cheesy mayo topping baked in a flaky pie crust.

- 1 9 inch deep dish frozen pie shell
- 1/4 cup shredded mozzarella or shredded cheddar cheese
- 4 large ripe tomatoes, sliced
- 1/3 cup fresh basil, chopped
- 3/4 cup Duke’s mayonnaise
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350°F (175°C).
- Bake the pie shell for 10 minutes, then let it cool.
- Sprinkle the bottom of the shell with 1/4 cup of cheese.
- Layer sliced tomatoes over the cheese and sprinkle with chopped basil.
- In a bowl, mix mayonnaise, shredded cheddar, and shredded mozzarella.
- Spread the mayo-cheese mixture evenly over the tomatoes.
- Bake for 30-35 minutes or until golden and bubbly.
- Let it cool for 10 minutes before slicing and serving.
Notes
Use ripe, firm tomatoes and pat dry with paper towels to avoid a soggy crust.
